This is a nice alternative to mashed potatoes. We serve it with all kinds of meats, works particularly well with pork, fish, and chicken Ingredients:
1 head cauliflower |
1 bunch basil |
handful of nuts (pine nuts are traditional, but we've used almonds, walnuts, and pistachios) |
1 clove garlic |
olive oil |
salt |
pepper |
optional: kalamata olives, chopped |
Directions:
1. Cut cauliflower into chunks, microwave it in a covered dish for about 8 minutes. 2. While cauliflower is cooking, put basil, nuts, garlic, salt and pepper in food processor. Drizzle in olive oil until you have a nice thick paste, but nothing too runny. 3. A little at a time, drop in cauliflower and blend until smooth. 4. Fold in Kalamata olives and serve. 5. Yum! |
