Easy Pepperoni Pasta Salad |

This salad is quick and easy, and you can easily tweek it to your taste. Ingredients:
1 16 oz package of spaghetti noodles |
6-8 oz sliced pepperoni |
8 oz block of cheddar or montery jack cheese cubed (or shredded) |
2 c. cherry tomatoes, whole or sliced in half (or about 1 c. chopped regular tomatoes) |
1/2 medium onion, chopped |
1-2 celery stalks, sliced |
1 medium sized cucumber, sliced |
1 c. carrots, sliced into coin shapes |
1 16 oz bottle of zesty italian salad dressing |
Directions:
1. Cook spaghetti noodles according to package directions 2. Drain noodles and run under cold water until very cool. Drain well 3. In a very large bowl, combine noodles, pepperoni, vegetables and entire bottle of salad dressing. Mix well. 4. Serve immediately of chill first. Chilling lets flavors meld together, so is actually better. 5. HINT: If you want to substitute the dressing for regular or low calorie Italian, it would still turn out fine. Also, feel free to leave any of the vegies you don't like out and add ones you do (such as green peppers or mushrooms...) and black olive slices can also be added if you like them |
