This will be an instant favorite! Just like with real pizza, it can be easily modified to suit anyone's taste - just substitute or add your favorite toppings. For a healthy, low-cal snack or light dinner, choose fat free or low fat cheese, whole wheat pita, and low fat pepperoni. *Note: for this specific recipe, one serving of fat free mozzarella is 1/4 cup, and 9 grams of pepperoni is about 5 slices. Use a large (6 inch) pita. Easily multiply amounts to create multiple servings.
Ingredients:
1/2 whole wheat pita
1 oz mozzarella cheese
9 grams pepperoni
1 pinch italian seasonings
1/4 cup pizza sauce
Directions:
1. Cut one large (6 inch) pita in half, and use fingers to gently open the cavity within the pita without breaking the sides.
2. Fill the cavity with a mixture of shredded cheese, pepperoni, and herbs of your choice. I used thyme and garlic powder, oregano and basil would also be great! Substitute peppers, onions, mushrooms, artichokes or leafy greens for the pepperoni to create a vegetarian version, or beef it up with cooked hamburger crumbles or sausage! (Be sure not to overfill pocket, or cheese will melt out of the cavity and make a burnt mess.)
3. Place pita pocket(s) into a 400 degree oven on a baking sheet. Cook until outside is lightly browned and cheese is hot and melty.
4. Serve with pizza sauce for dipping!
