Easy Peasy Kidney Bean Salad |

A great starter recipe... a few ingredients, cheap and quick! What more could you ask for? ;) Nothing fancy, here, just a simple summer salad. Ingredients:
3 cups cooked and cooled red kidney beans(or 2 cans, drained and rinsed) |
about 1/4 cup red onion, diced |
juice from 1/2 lemon or 1 lime |
1-2 stalks celery, chopped |
2 hard boiled eggs, chopped |
3-4t dill pickle relish |
1/4ish cup of mayo(to taste) |
dash of hot sauce(or 2 or 3 or... yeah... to taste |
kosher or sea salt and fresh ground pepper |
Directions:
1. Soak onion in lemon or lime juice for at least 15 minutes. Drain and discard juice. 2. Combine all ingredients and mix well. 3. Refrigerate until ready to serve. 4. **soaking raw onion in citrus juice helps tone down the harshness of the onion flavor, a bit. I LOVE onions, but unless they are vidalias, I don't like them raw much..... I now do this with any salad/condiment I make using them. :) |
