Easy Peach And Apricot Cobbler |

I always have loved this simple cobbler.. Kind of a comfort food to me. Secret... I have baked it on my gas grill and it browned up nicly.. Just watch it real close. Ingredients:
1/2 cup sugar |
2 tablespoons cornstarch |
1 can 1pound 13 oz sliced peaches, save the juice |
1 10 1/2 oz apricot halfs, save the juice |
1 tablespoon real butter |
1 teaspoon almond extract |

1/2 cup flour |
1/2 cup sugar |
3/4 teaspoon baking powder |
1/4 teaspoon salt |
2 tablespoon real butter softened |
1 large egg |
topping |
1 cup heavy cream |
2 tablespoons sugar |
1/2 teaspoon almond extract |
Directions:
1. Preheat your oven to 400 2. In a medium saucepan, mix together sugar and cornstarch 3. Stir in 1/2 cup each of peach and apricot juice. 4. Cook over medium heat while stirring. 5. When it boils for about 2 minutes remove. 6. Stir in butter, and almond extract 7. Add peaches and apricots mix well 8. Spoon in to a 1 1/2 quart dish.. If using BBQ USE METAL 9. Mix all the crust ingredents together and pour or spoon over fruit 10. Bake until top is a nice golded brown. 11. Remove to a rack to cool just a bit 12. Mix topping until it forms peaks 13. Serve warm with whipped topping 14. It's always good cold too, if there are left overs! |
