Given to me by a friend, altered slightly by adding cajun seasoning & Ro-tel tomatoes. Serve over rice. Ingredients:
1 lb ground meat |
1 lb okra, sliced (fresh or substitute frozen) |
1 small onion, chopped |
1 cup frozen corn |
1 (14 1/2 ounce) can diced tomatoes |
1 (10 ounce) can ro-tel tomatoes |
Directions:
1. Brown ground meat and onions. Season with cajun seasoning while browning. I like Tony Cacchere's. Add tomatoes and okra. Cover and simmer about 20 minutes, adding corn in the last 10 minutes. Serve over rice. |
