If you like onions, you will enjoy this easy dish. And if you're a Weight Watchers person, as I am, the dish is 8 points per serving! :) Ingredients:
2 cups pasta (elbows, shells, bow ties) |
4 tablespoons butter |
2 cups onions, roughly chopped |
1/2 teaspoon salt |
1 cup cottage cheese, drained |
Directions:
1. Cook the pasta according to package and drain. 2. Meanwhile, melt the butter, add the onions, and sauté over medium-high heat, stirring frequently, for 5 minutes. 3. Add salt and continue sautéing for another 10-15 minutes, until onions are somewhat shrunken and medium- to dark-brown in colour. 4. Stir in the pasta and cook for a minute or two, then add cottage cheese. Keep stirring - when the cottage cheese just starts to melt, it's ready - serve immediately. |
