This is the easiest lunchtime pizza. I adapted it from a recipe of Elie Kriegers and we eat it at least once a week! Hope you enjoy! Ingredients:
4 tortillas |
1 cup sliced mushrooms |
1 cup sliced purple onion |
feta cheese |
olive oil |
1 cup diced chicken (prepared) |
2 cups fresh spinach leaves |
salt and pepper |
Directions:
1. Heat the olive oil in a skillet, toss in mushrooms and onions. Saute to your liking. 2. Add Spinach leaves, drizzle olive oil and salt and pepper. Saute until leaves are wilted. Take off heat. 3. Lay your tortillas out on a pizza stone, or cookie sheet. I prefer the pizza stone. 4. Divide mixture in skillet evenly between the tortillas. 5. Add feta cheese, and chicken (if desired). 6. Toss in a preheated 400 degree oven. 7. Bake about 7 minutes or until tortillas are browned around the edges. |
