Easy Moroccan Vegetarian Stew |

This is an easy vegetarian meal that I threw together for hubby and I one night. Its super easy and oh so good! Ingredients:
1 red onion |
1 bell pepper |
1 garlic clove |
16 ounces chickpeas |
16 ounces diced tomatoes |
8 ounces corn niblets |
1 cup uncooked rice |
salt and pepper |
chili flakes |
Directions:
1. Cook rice according to package directions. 2. Saute the onion, pepper, and garlic until soft and slightly brown. 3. Dump in your other canned ingredients, and seasonings. *seasonings may be adjusted to personal preference*. 4. Simmer. 5. Serve. over rice. |
