Vegetarian Minestrone Soup Ingredients:
1/2 cup elbow macaroni |
5 cups chicken broth |
2 cups mixed vegetables |
1 cup chickpeas |
1/4 cup sun-dried tomatoes, diced |
Directions:
1. Boil 1⁄3 cup elbow macaroni in 5 cups chicken broth 5 minutes. Add 2 cups frozen Italian vegetables, 1 cup chickpeas and 1⁄4 cup chopped sun-dried tomatoes; simmer until tender. |
