This soup reminds my family of tortilla soup. We served our soup with shredded cheddar cheese. I thought this was such a quick and easy soup. I found this recipe on Obesity Help. When I nade this recipe I doubled the recipe. I only used 15oz or a bit more chicken broth, mexican chili beans, 16oz of medium salsa, 15oz Rotel tomatoes and chilies, 1 - 9oz can chicken and 1 - 12oz can of chicken. Ingredients:
14 1/2 ounces low sodium chicken broth |
15 ounces no-salt-added corn |
15 ounces black beans (rinsed and drained) |
16 ounces low-fat refried beans (not with the cheese) |
16 ounces mild chunky salsa (1 jar or just diced tomatoes) |
9 1/2 ounces chicken |
Directions:
1. Mix all ingredients and heat and eat! 2. Some people add a little shredded cheese and some crushed tortilla chips. |
