I've been using this quick and easy recipe for years to accompany Mexican-inspired meals. You probably have everything in your pantry to try it for dinner tonight. Ingredients:
1 cup uncooked rice (not instant) |
1 onion, diced |
1 -2 garlic clove, minced |
1 3/4 cups chicken broth |
1/2 cup salsa |
2 tablespoons oil |
Directions:
1. Saute onons and garlic in saucepan in hot oil until softened. 2. Add rice and saute 2 -3 minutes, or until it begins to turn white. 3. Add broth and salsa. 4. Bring to a full boil; cover and reduce to simmer. 5. Simmer 25 minutes & turn off heat. 6. Let rice sit for 5 minutes. Fluff with fork and serve. 7. Optional: Stir in a small can of well drained corn, mixed vegetables or sliced green onion. |
