I learned to make this casserole back in highschool in a home economics class. It's easy and good.
Ingredients:
1/2 lb ground buffalo meat
1/2 lb organic ground beef
1 medium chopped onion
1 (6 ounce) can of sliced black olives
1 (12 ounce) can chili con carne (with or without beans)
1 (6 ounce) bag of shredded cheddar cheese
1 (8 ounce) can tomato sauce
1 (9 ounce) bag frito corn chips
Directions:
1. Preheat oven to 350.
2. Saute chopped onions slightly.
3. Add ground beef and bison and saute with chopped onions.
4. Drain any excess fat after meat is cooked.
5. Crush Frito chips and layer onto a casserole dish.
6. You will add layers of meat, tomato sauce, chili con carne, sliced olives, cheese, then repeat layers starting with crushed fritos. You only need to make 2 layers of total ingredients.
7. Top the layer with cheese and crushed fritos.
8. Cover with foil and bake for 1 hour.
