Medium spicy chili that is not overwhelming and generally will please everyone. Very Easy to Make. Chipotle Chili in Adobo Sauce adds a nice smoky kick but still a good chili if you don;t have this ingredient on hand. I use Tomato sauce but any type of tomato will do. Diced, crushed, whatever you prefer or have on hand. I love mushrooms so I use a lot. I don;t love Kdney beans as much so I use less. I use a crockpot for cooking but a dutch oven or larger stockpot with lid will do just as well. Adjust ingredients to yor own tastes. It is after all Chili! Ingredients:
2 lbs lean ground beef |
2 tablespoons olive oil |
1 large onion (white or yellow) |
2 medium green bell peppers |
1 medium habanero pepper |
1 chipotle chile in adobo (optional) |
4 garlic cloves |
3 (28 ounce) cans tomato sauce |
1 (28 ounce) can kidney beans |
2 (10 ounce) cans sliced mushrooms |
1 1/2 tablespoons chili powder |
1 teaspoon cumin |
4 garlic cloves |
2 teaspoons salt |
1 -2 drop hot sauce (optional to taste) |
Directions:
1. Brown ground beef, drain and set aside. Heat Olive oil in sauce pan. Saute finely chopped Onion, Green Pepper, Garlic, Habanero and Chipotle Chilis for about 5 minutes on medium heat. Combine everything in crockpot. Rinse Kidney Beans and mushrooms. Add to crockpot along with tomato sauce and spices. Stir well. Set crockpot on low for 3 hours. Or if using Dutch oven or Stock Pot, simmer on low for about the same time. Enjoy! |
