Delicious broth simmered with meatballs, vegetables, white beans and pasta. Ingredients:
4 (14 ounce) cans lower sodium beef broth |
1 (16 ounce) package frozen mixed vegetables |
1 (12 ounce) package frozen cooked meatballs |
1 (15 ounce) can small white beans, drained, rinsed |
1 (14.5 ounce) can hunt’s® diced tomatoes with green pepper, celery & onions, undrained |
1/4 cup hunt's® tomato sauce-no salt added |
1/4 teaspoon italian seasoning |
1/4 teaspoon salt |
1/4 teaspoon ground black pepper |
1/2 cup small shell pasta |
shredded parmesan cheese (optional) |
Directions:
1. Combine broth, vegetables, meatballs, beans, tomatoes with their liquid, tomato paste, Italian seasoning, salt and pepper in large saucepan or Dutch oven. 2. Bring to a boil over high heat. Reduce heat to medium-high; add pasta. Cook for 15 minutes, stirring occasionally, or until pasta is tender. Garnish with cheese, if desired. |
