EASY MASHED POTATOES AND CORN This recipe came from an estate sale. I obtained it when I purchased the family collection from the Willingham estate in Round Rock, Texas in 1984. Ingredients:
11 ounce can yellow and white corn undrained |
2 cups milk |
3 tablespoons butter |
1/2 teaspoon salt |
1/8 teaspoon freshly ground black pepper |
2 cups mashed potato flakes |
1/2 cup sour cream |
2 tablespoons grated parmesan cheese |
2 tablespoons real bacon bits |
Directions:
1. In medium saucepan combine corn, milk, butter, salt and pepper then mix well. 2. Cook over medium heat until mixture is hot and bubbly then remove from heat. 3. Stir in potato flakes and sour cream until well blended. 4. Sprinkle with parmesan cheese and bacon bits. |
