I made Olive Garden Tuscan Garlic Chicken one night. A few days later, I needed to use some of the ingredients but was too lazy to go to the grocery store. These are extra ingredients I had left over. I even thought about adding broccoli or asparagus. Ingredients:
2 tablespoons canola oil |
1/2 red bell pepper, chopped |
4 minced garlic cloves |
2 ounces vodka |
1 teaspoon cayenne pepper |
1 1/2 cups cream |
1 cup spinach leaves, no stems |
2/3 cup mushroom, chopped |
1/2 cup parmesan cheese, grated |
Directions:
1. Heat 2 T oil in a sauce pan. 2. Add chopped garlic and bell pepper. 3. Heat until pepper begins to soften. 4. Add Vodka. 5. Bring to a soft boil. 6. Add Cream. 7. Add cayenne pepper 8. Bring to a soft boil. 9. Add spinach and Mushrooms. 10. Cook until spinach wilts. 11. Add parmesan Cheese. 12. *I served this over a chicken breast I cooked with my George Foreman Grill. 13. **If you like spinach, you may want to put even more in the pan. 14.
