As seen on Sandra Lee's Semi-Homemade. Placed here for safe keeping. While I haven't made it yet, I can't wait to try it! Ingredients:
2 tablespoons fresh mint, finely chopped |
2/3 lime curd |
1 cup prepared vanilla pudding (2 jello-type pudding cups) |
1 1/2 cups egg whites |
nonstick cooking spray, butter flavored |
sugar |
Directions:
1. Combine mint, curd and pudding. 2. Beat egg whites with electric mixer until stiff peaks form. 3. Fold 1/3 egg white mix into curd mixture. Repeat with the next third, then final third. 4. Coat 4 ramekins with butter flavored cooking spray and sprinkle with sugar. 5. Divide souffle mix between 4 ramekins. 6. Bake at 400 degrees for 20 minutes until golden brown. 7. Serve with powdered sugar or whipped cream. |
