I found this on and wanted to post it on here to save it. It's a fast and easy (and healthy!) meal. Ingredients:
4 boneless skinless chicken breasts |
1 cup fat free sour cream |
1 tablespoon fresh dill, minced or 1 teaspoon dried dill |
1 teaspoon ground pepper |
1 teaspoon lemon zest, minced |
Directions:
1. Preheat oven to 425 degrees. 2. Combine all ingredients except chicken in a small bowl. 3. Spray a medium casserole dish with nonstick cooking spray. 4. Spread 1/4 of the lemon dill sauce on bottom of pan. 5. Arrange chicken breasts on top of sauce in a single layer. 6. Pour remaining sauce over chicken and spread evenly. 7. Bake uncovered for 30-35 minutes, until chicken is no longer pink in the middle. |
