From Mom's recipe box. Ingredients:
1 1/2 lbs lean ground beef |
1/2 cup breadcrumbs |
1/4 cup chopped parsley |
1 egg |
1 teaspoon salt |
1/8 teaspoon ground black pepper |
1 (8 ounce) can tomato sauce with onion |
1 cup shredded sharp cheddar cheese |
1/2 cup pickle relish |
Directions:
1. Preheat oven to 350°F. 2. In a large bowl, combine beef, bread crumbs, parsley, egg, salt, pepper and 1/2 can of tomato sauce. 3. Place half the meat mixture in a loaf pan. Cover with cheese and relish, then cover with the remaining meat mixture. 4. Bake for 1 hour. Drain off accumulated fat. Turn loaf out into a shallow baking pan. Cover with remaining tomato sauce and bake 15 minutes longer. |
