Easy Layered Blueberry Cheesecake Pie |

This is an easy and elegant dessert. I served it to guests and they thought it was really special. Ingredients:
1 unbaked pastry shell (9-inch deep dish or 10-inch) |
1 (21 ounce) can blueberry pie filling |
1 (8 ounce) package cream cheese, softened |
1 (14 ounce) can sweetened condensed milk |
2 eggs |
2 tablespoons lemon juice |
1 teaspoon vanilla extract |
Directions:
1. Place rack in lowest position in oven; preheat to 425. 2. Pour pie filling into pastry shell. 3. Bake 15 minutes. 4. In large mixer bowl, beat cream cheese until fluffy. 5. Gradually beat in sweetened condensed milk then eggs, lemon juice and vanilla. 6. Pour over blueberries. 7. Reduce oven temperature to 350. 8. Bake 25 minutes or until set. 9. Cool. 10. Chill. 11. Refrigerate leftovers. |
