Easy Key Lime Cake

I'm baking this while I type out the recipe to you. This is instant gratification, folks! This is such an easy key lime cake to bake and perfect for groups and potlucks. You can also make a great lemon cake out of the recipe by using lemon juice instead of the lime. Read more . This recipe uses a cake mix so that alone tells you its a simple recipe but one that leaves you with a moist and delicious citrus-flavored cake.
Ingredients:
1 box of lemon cake mix
1 cup water
3/4 cup of vegetable oil
4 eggs
4 tb keylime juice (or lemon juice or regular lime juice)
icing ingredients
2 cups of powdered sugar
1/3 cup of keylime juice
optional: 2 tb keylime zest (grated rind)
Directions:
1. *I make mine in a 13x9 inch pan covered in Reynold's Non-Stick Aluminum. You can use a bundt or angelfood pan.
2. In a large bowl, mix the cake mix, eggs, oil and the water until well-blended.
3. Add 4 TB of juice
4. Bake for 35 minutes at 350 degrees until cake is golden brown and firm.
5. Remove cake from oven and cool.
6. Mix the powdered sugar with the lime or lemon juice until it is smooth and pourable. (You can add your zest at this time.)
7. Poke holes over the cake and pour the icing over and let the icing set for a good hour or serve! (I let the cake sit on my countertop for a few hours before serving as its great at room temperature.)
8. This is a really nicely glazed cake and just wonderful for any spring or summertime events. It also makes great cupcakes whic hare perfect for Mother's Day brunches.
