Easy Jalapeño Cilantro Chicken Salad

Whipped this up when looking for a substantial snack and lunch. It's delicious filled into a roasted poblano pepper as a healthy lunch!
Ingredients:
1 lb boneless skinless chicken breast
4 tablespoons light mayonnaise
1/2 cup vidalia onion, chopped
1/2 cup pickled jalapeno pepper, chopped
4 tablespoons fresh cilantro, chopped
1 tablespoon seasoning salt
Directions:
1. Heat chicken broth to boil on stovetop.
2. Cook chicken in chicken broth until cooked through (about 8-10 minutes) Shred or chop chicken.
3. Mix together with jalapeño, onion, mayo, seasoning salt and cilantro.
4. Chill for at least 30 minutes.
5. Enjoy! (stuff in a pepper for a low carb, protein packed lunch!).
