Easy Jalapeño Cilantro Chicken Salad |

Whipped this up when looking for a substantial snack and lunch. It's delicious filled into a roasted poblano pepper as a healthy lunch! Ingredients:
1 lb boneless skinless chicken breast |
4 tablespoons light mayonnaise |
1/2 cup vidalia onion, chopped |
1/2 cup pickled jalapeno pepper, chopped |
4 tablespoons fresh cilantro, chopped |
1 tablespoon seasoning salt |
Directions:
1. Heat chicken broth to boil on stovetop. 2. Cook chicken in chicken broth until cooked through (about 8-10 minutes) Shred or chop chicken. 3. Mix together with jalapeño, onion, mayo, seasoning salt and cilantro. 4. Chill for at least 30 minutes. 5. Enjoy! (stuff in a pepper for a low carb, protein packed lunch!). |
