Easy Italian Potato Casserole |

4 -6 potatoes |
1/4 cup oil |
1 onion, chopped fine |
2 tomatoes |
1 cup breadcrumbs |
1 teaspoon dried oregano |
salt and pepper |
Directions:
1. Peel potatoes and slice. 2. Cook onion in 2 tablespoons of oil for 5 minutes. 3. Add potatoes and saute for 3 minutes. 4. Season with salt and pepper. 5. Transfer to baking pan which has been sprayed with non-stick cooking spray. 6. Top with diced tomatoes. 7. Sprinkle with oregano and breadcrumbs. 8. Drizzle with oil. 9. Bake at 400 degrees F. 10. until tender. 11. About 30 minutes. 12. Enjoy! |
