This is what I make for myself when I'm too tired to cook but still want something fresh and yummy. It's fast, easy, and you can vary almost any ingredient. Ingredients:
1 refrigerated personal-size pizza crusts or 1 pita bread, round |
1 tablespoon olive oil |
2 tablespoons hummus |
1 teaspoon lemon juice |
sliced grape tomatoes |
kalamata olive |
sauteed onions and garlic (optional) |
goat cheese |
salt and pepper |
basil leaves (small handful) |
Directions:
1. Preheat oven to 450 degrees. 2. Brush pizza crust with olive oil. 3. Mix hummus and lemon juice together and spread onto crust. 4. Top with tomatoes, olives, onions/garlic, and goat cheese. Salt and pepper. 5. Bake until crust is crisp (about 10 minutes). 6. Top with fresh basil leaves. 7. Enjoy. |
