A Southern dish served New Year's Day to bring good luck and prosperity for the next year. Ingredients:
1 (16 ounce) can black-eyed peas |
2 cups prepared minute rice cooked rice |
bacon grease, for flavoring |
Directions:
1. Prepare Minute rice to equal 2 cups when done. 2. Heat black-eyed peas and add a little water if needed and about two tablespoons bacon grease. 3. After rice is ready and peas cooked 4. to look like soup beans mix these together and serve with ham if desired. |
