Easy Ham and Potato Casserole |

This recipe comes from the financial blogger . This simple casserole is extra good with cheese melted on top just before you serve it. Cheddar or Swiss cheese come to mind, but any cheese you like will work. Ingredients:
4 red potatoes, well scrubbed and sliced (not necessary to peel) |
2 red onions, finely chopped |
1 1/2 lbs cubed ham |
1 (10 ounce) can condensed cream of celery soup, diluted according to can directions |
2 tablespoons flour |
2 -4 ounces grated cheese, of choice (optional) |
Directions:
1. Combine all ingredients except cheese in a 3-1/2 quart crockpot. Add salt and pepper to taste. 2. Cover and cook on LO heat for 8 hours. If you wish to top with cheese, do so at the end of the cooking time. Recover the crockpot and wait until cheese gets melty. |
