Easy Grilled Veggies

Barbequeman is pacing back and forth, wondering when he will get to grill without snow !!! So, in honor of that first melting, I offer this dish. You will need to purchase a BBQ Wok ( a metal pan with small holes ) in order to make this come out well without losing half the veggies off the grill '-) A family favorite. Read more .....and healthy too !
Ingredients:
1 bottle of greek, olive oil and vinegar, italian, vinaigrette or whatever dressing / marinade flavor you think would smoke the veggies well....
2 small zucchini squash
2 small yellow squash
1 medium red onion
1 lb fresh crimini or brown mushrooms
1 large green pepper
1 large red pepper ( really red to make it sweeter.... )
1 large yellow or gold pepper
1 can / jar artichoke hearts in water - yes, no oil, please....
Directions:
1. Check out the instructions for Officially Annoyed at Myself, and then make sure you have a full bottle of propane for your grill '-)
2. Wash all the veggies, and cut into bite size pieces.
3. Place the veggies ( including the artichoke hearts ) in a large ziploc bag with the salad dressing / marinade, and refrigerate for an hour or two...
4. When ready to grill the veggies for dinner, simply fire up the grill, get it nice and hot, and put the wok on the grid. Sometimes it helps to spray the wok with a non-stick spray such as Pam. If you don't care for Pam, try Ethyl or Suzie....smirk !
5. Using a slotted spoon, place the veggies in the wok, stirring frequently. Lots of steam and smoke will arise, and you will need to occasionally 'spash' the veggies with your marinade mix.
6. Another side note: if you are concerned about the artichoke hearts deteriorating, put them in a small bowl with about 1/4 cup of marinade, and add to the veggie mix a few minutes before serving. If the only artichokes available are in oil, drain them VERY well to avoid flare ups from the oil.....
7. Cook the veggies until they are done to YOUR liking - hopefully not soggy, just a combo of soft AND crunchy.....20 minutes is usually the max !
