Easy Grilled Mojito Chicken |

This is a simple marinade that yields a tender, zesty chicken that's great on it's own, or as a filling for tacos, fajitas or to top nachos or a salad. Prep time includes marinating time. Ingredients:
3lbs boneless skinless breasts, thighs or tenderloin pieces |
3 limes |
1 stick butter, divided |
1/4 cup olive oil |
1/4 cup rum(light or dark, if subbing, try oj) |
4 cloves garlic, minced |
1/2 cup fresh mint leaves, chopped(make sure to crush the leaves, too) |
2 green onions, sliced |
1t dry mustard |
1/2t cayenne(i use 2t) |
1t paprika |
kosher or sea salt and fresh ground black pepper(don't skimp on the black pepper |
Directions:
1. Melt 1/2 stick butter and add it, olive oil, rum, juice from 2 limes, and zest from 1, garlic, mustard, mint, onions, cayenne, paprika, salt and pepper in large zipper bag. 2. Add chicken pieces and toss to coat. 3. Refrigerate for at least 4 hours. 4. Melt remaining butter and add juice from remaining lime, salt and pepper 5. Grill chicken on medium heat until temperature is 165, turning once, and brushing with the lime butter. This will take anywhere from 5-12 minutes each side, probably, depending on the thickness and cut of chicken pieces. |
