A little spice, alot of taste and almost no time to make. An adaption of a recipe from Family Circle (Nov, 2007) that started with refrigerated sugar cookie dough. I changed just a couple things and made them with packaged sugar cookie mix (which is almost always in my pantry and makes a small enough batch for our small family). Ingredients:
18 ounces sugar cookie mix |
1 tablespoon cocoa powder |
1 tablespoon pumpkin pie spice |
2 teaspoons ground ginger |
1 3/4 teaspoons baking soda |
1/4 teaspoon white pepper |
1/2 cup butter, melted |
1 egg |
1/3 cup decorator sugar (course, white) |
Directions:
1. Mix cookie mix with cocoa, spices and baking soda until well mixed (should have the appearance of chocolate cookie mix). 2. Add butter and egg, mix well. 3. Using about 1 tablespoon dough, form into 1 inch disks and coat with the coarse sugar. 4. Place on ungreased baking sheets, about 2 inches apart. 5. Bake at 375 degrees for 7-9 minutes. 6. Let cool on baking sheet for 2 minutes. 7. Remove to wire rack to cool completely. |
