I have no idea where I got this recipe, but it makes a great spice cookie. Ingredients:
18 1/2 ounces spice cake mix |
1 teaspoon ginger, ground |
2 large eggs, lightly beaten |
1/4 cup vegetable oil |
1/4 cup molasses |
sugar |
Directions:
1. In a large bowl combine cake mix and ginger. 2. In a separate bowl combine eggs, oil and molasses. 3. Add to dry ingredients and stir until blended. 4. Dough will be sticky. 5. Shape dough into a bowl. 6. Cover and refrigerate at least 8 hours. 7. Divide dough in half. 8. Work with 1 portion of dough at a time. 9. Store the other half of dough in refrigerator. 10. Shape dough into 1 inch balls. 11. Roll dough in sugar. 12. Place 1 inches apart on lightly greased cookie sheets. 13. Bake at 375 degrees for 14 minutes. 14. Cool for 2 minutes on cookie sheets, then remove to wire racks. 15. Let cookies cool completely. 16. Repeat with remaining dough and sugar. |
