It's a different style of German potato salad which is very refreshing. If you like, you can also add some hard-boiled egg slices. Ingredients:
8 potatoes |
1 cucumber, thinly sliced |
1/2 cup mayonnaise |
salt and pepper to taste |
Directions:
1. Place potatoes in a large saucepan or Dutch oven, and cover with lightly salted water. Bring to a boil over high heat, then reduce heat to medium, and simmer until potatoes are tender; drain and cool. Peel the potatoes and cut into 1/4 inch slices. 2. Mix together the potatoes, cucumbers, and mayonnaise; season with salt and pepper. |
