This uses canned tomatoes so you can enjoy the summer fresh taste any time of year. Ingredients:
3 (14 ounce) cans petite diced tomatoes |
1 (4 ounce) can chopped green chilies |
2 garlic cloves, minced |
2 cups diced cucumbers, peeled and seeds removed |
1 cup diced celery |
1 cup diced green onion |
1 tablespoon chili powder |
2 tablespoons red wine vinegar |
1/4 cup extra virgin olive oil |
Directions:
1. Combine all in large bowl. 2. Using immersion blender, blend to desired consistency. Or using regular blender, place half of ingredients in blender, blend and return to remaining ingredients. |
