A good vegetarian style dish for a light dinner. Ingredients:
1 cup zucchini, chopped |
1 cup tomato, chopped |
1/2 cup onion, chopped |
1/3 cup parmesan cheese, grated |
1 cup skim milk |
1/2 cup bisquick |
2 eggs |
1/2 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. Heat oven to 400°F Lightly grease an 8x8 baking dish. 2. Evenly place zucchini, tomato, onion and cheese in dish. 3. Beat remaining ingredients until smooth. 4. Pour mix evenly in dish. 5. Bake 30-35 minutes. 6. Let cool 5 min before serving. |
