This is my favorite breakfast. Add a touch of butter and syrup for a satisfying breakfast. I chop the peppers, potatoes and onions ahead of time and freeze them. Ingredients:
1/2 cup onion, chopped |
1 cup potato, shredded |
1/4 cup green pepper, chopped (optional) |
2 large eggs |
2 tablespoons milk |
salt and pepper |
1 tablespoon canola oil |
Directions:
1. Preheat oven to 350. Saute potatoes and onions in oil till onions are soft. Meanwhile mix eggs and milk and add to pan when onions are soft. Bake in oven till firm, roughly 15 minutes. |
