This is my version of a recipe that I saw on a local news program. Loved the idea, but, that recipe was too plain for me! We just love these while watching football! Ingredients:
25 frito lays scoops or more |
1 lb. 93% lean ground beef or chicken |
1 package of taco seasoning |
1 t cumin |
seasoned salt |
garlic pepper |
1 t worcestershire |
2 t dry ranch seasoning (optional) |
1/2 onion, chopped |
1/2 red bell bepper, chopped (or yellow, green, or all 3) |
1small can green chiles, drained |
1/4 c water or beef stock |
1-2 cup mexican fine shredded cheese |
1/2 cup salsa, hot, or mild which ever you prefer. |
chopped fresh tomatoes |
chopped black olives |
sliced jalepenos |
3 green onions |
small carton sourcream |
Directions:
1. Slice the green onions and stir into the sour cream 2. Preheat oven to 400 degrees. 3. Brown ground beef with seasonings, onion, pepper(s), and chiles. 4. Add stock once all pink color disappears and veggies are soft 5. Arrange fritos on oven safe pan 6. Add ground beef first then salsa then cheese. 7. Bake in oven for 3-4 mins. 8. Serve with a dollop of sour cream/green onion topping, tomatoes, olives and jalepenos as desired. |
