It could not get any easier than this. We have these at least once a month. Serve with a tartar sauce or a good cocktail sauce with added fresh lime juice. Ingredients:
3/4 c yellow cornmeal |
1/3 c all-purpose flour |
1/2 ts salt |
1 tablespoon cajun seasoning or texas dust. |
24 oz select oysters; drained |
canola oil for deep frying |
fresh parsley sprigs |
lemon or lime wedges |
Directions:
1. Combine cornmeal, flour, seasonings and salt 2. Dredge oysters in cornmeal mixture. 3. Fry oysters at 375 degrees until oysters float to the top and are golden brown; drain well on a paper bag or paper towel. 4. Transfer to serving platter and garnish with parsley and lemon wedges. 5. Yeild: 2 dozen. 6. Texas Dust is a seasoning that is made here in the Valley, a mix of chile powder, cumin and other seasonings. If you are intrested I can post the web site. 7. Enjoy |
