From the Athenos Feta Cheese company. Ingredients:
2 lbs chicken breasts, boneless skinless (about 6) |
2 tablespoons lemon juice, divided (fresh is best) |
1/4 teaspoon salt |
1/4 teaspoon pepper |
6 ounces cups feta cheese, crumbled (1 1/2 cups) |
1/4 cup red bell pepper, minced |
1/4 cup fresh parsley, minced |
Directions:
1. Preheat oven to 350°F. 2. Arrange chicken in a 13 x 9 baking pan. 3. Drizzle with 1 tablespoon of the lemon juice; season with salt and pepper. 4. Sprinkle feta cheese over top and drizzle with remaining lemon juice. 5. Bake for 35 to 40 minutes or until chicken is cooked through. 6. Sprinkle with red bell pepper and parsley. |
