Easy Fast Albondigas Soup |

When I dated my husband back in the early 60's, we would go to a little cafe and order this soup. It is delicious and by the way, hardly no carbs or fat-healthy, tasty and authentic. Ingredients:
1 lb ground beef |
1 onion, quartered |
1/2 cup rice |
1 teaspoon pepper |
1 teaspoon salt |
1 teaspoon cumin |
2 quarts beef broth |
1/2 cup rice |
salt and pepper |
2 stalks celery |
2 carrots |
Directions:
1. Mix hamburger, onion, salt and pepper, spices and rice; form into balls. 2. In a dutch oven add beef broth, carrots and celery (can use canned broth or water and bullioin). 3. Bring broth to boil. Add meatballs. Cover and simmer an hour. |
