Easy Fast Albondigas Soup

When I dated my husband back in the early 60's, we would go to a little cafe and order this soup. It is delicious and by the way, hardly no carbs or fat-healthy, tasty and authentic.
Ingredients:
1 lb ground beef
1 onion, quartered
1/2 cup rice
1 teaspoon pepper
1 teaspoon salt
1 teaspoon cumin
2 quarts beef broth
1/2 cup rice
salt and pepper
2 stalks celery
2 carrots
Directions:
1. Mix hamburger, onion, salt and pepper, spices and rice; form into balls.
2. In a dutch oven add beef broth, carrots and celery (can use canned broth or water and bullioin).
3. Bring broth to boil. Add meatballs. Cover and simmer an hour.
