Serve hot falafel in a warm pita with pickled radish, tahini, onions, shredded lettuce, hummus, olives and some people like to add hot sauce. Ingredients:
2 cups of dried chickpeas, soaked in water for 12 hours or overnight |
crumbs from 2 slices of white bread |
5 cloves of garlic, minced or finely chopped |
2 tsps. baking soda |
1/3 cup fresh parsley, chopped |
1/2 cup chopped coriander |
1/2 small - medium onion |
1 teaspoon cumin |
1 teaspoon paprika |
salt, pepper |
oil for deep frying |
Directions:
1. Rinse the soaked chickpeas and put them in a food processor with garlic, onion and spices. 2. Grind until you get a rough moist texture. 3. Add a little water if needed. 4. Move the mixture into a large bowl, add the rest of the ingredients and set aside, covered for 45 - 55 minutes. 5. Warm the oil - it should be hot, not boiling. 6. Add the baking soda to the mixture and knead a little. 7. Wet your hands and shape into little balls or I take two spoons and shape them that way. 8. They should be about the size of an apricot. 9. Fry until they turn a deep golden brown shade. 10. Serve hot! |
