I just threw this receipe together tonight. We wanted fajitas and this is what i came up with. Ingredients:
1 green bell pepper |
1 medium onion |
1/2 cup sliced mushrooms (about half the package) |
1 lb chicken strips (or real chicken, we dont eat meat. we used morning star chicken strips) |
2 -3 garlic, pressed |
1/2 teaspoon parsley |
1/2 teaspoon cumin |
1/2 teaspoon oregano |
1/2 teaspoon paprika |
1/8 teaspoon lemon juice (about 3 sprinkles) |
1/8 teaspoon lime juice (about 3 sprinkles) |
1/4 cup water (or less) |
tortilla |
Directions:
1. Heat olive oil over medium heat. 2. Saute the peppers, onions and mushrooms over medium heat for about 2 minutes. 3. Add spices (parsley, oregano, paprika, and cumin) and sprinkle a little of lemon and lime juice. Press garlic and saute for 3-4 minutes Add cooked meat of your choice. 4. Use the water to keep the veggies moist by adding a little water at a time. 5. Cook until the meat is heated and the veggies are tender. |
