This super easy and yummy recipe is originally from Souther Living. My family loves this for dinner- even the picky eaters. Ingredients:
1 tablespoon oil |
1 onion, chopped |
1 lb ground beef |
10 3/4 ounces condensed tomato soup |
10 ounces enchilada sauce |
8 medium flour tortillas |
2 cups cheddar cheese, shredded |
Directions:
1. Heat oil in a large pan and add onions. Cook until soft. 2. Add ground beef and cook over medium heat until meat is browned, stirring until meat crumbles; drain and return to skillet. 3. Stir in tomato soup and enchilada sauce. Mix well and bring to a simmer. 4. Spread about 1/4 cup meat mixture on each tortilla; sprinkle tortillas evenly with 1 cup cheese. Roll up, and place, seam side down, in a 9x13-inch baking dish. Pour remaining meat mixture over tortillas. 5. Cover and bake at 350 degrees for 20 minutes. 6. Uncover and sprinkle with remaining cheese. Bake an additional 5 minutes or until cheese melts. |
