I have been making enchiladas this way since I was in college. These are very easy to make and taste good too! Ingredients:
1 lb ground beef |
1 (17 1/2 ounce) jar enchilada sauce |
2 cups mexican blend cheese |
8 tortillas |
Directions:
1. Heat oven to 350. 2. Cook beef until browned. 3. Stir 1/2 cup of enchilada sauce and 1 cup of cheese into beef mixture. 4. Spread 1/2 cup of the sauce in a 13 x 9 baking dish. 5. Spoon about 4 tablespoons of the beef mixture into each tortilla. 6. Roll up and place seam side down in baking dish. 7. Top with remaining sauce and cheese. 8. Bake for about 20 minutes or until the cheese melts. |
