Easy Enchilada Sauce (Red) |

I took a few recipes and combined and tweaked them to come up with this. I love it, perfect over my Favorite Chicken Enchilada recipe :) I double it to cover 2 9x13 casseroles. Add more chicken broth if you need to thin it out more. Ingredients:
2 tablespoons oil |
2 tablespoons flour |
1/4 cup mexican chili powder |
1 teaspoon cumin |
1 teaspoon oregano |
1/2 teaspoon garlic powder |
1 tablespoon turbinado sugar |
1 1/2 cups chicken broth |
1 cup tomato sauce |
salt |
1/4-1 teaspoon cayenne pepper (optional) |
Directions:
1. heat oil in medium saucepan. 2. whisk in flour until smooth. 3. stir in spices, cook 1 minute. 4. whisk in broth until smooth. 5. add the tomato sauce, and salt and cayenne pepper to taste. 6. bring to a boil, reduce heat and simmer about 15 minutes. 7. this is wonderful made a day ahead, the flavors combine even more. |
