My picky kids love this. It isn't too spicy and they get veggies mixed in (added bonus). My 12 year old likes to make this because it is so easy. It's also great for potlucks. Ingredients:
8 burrito-size flour tortillas |
1 lb ground chuck |
1 medium onion, chopped |
1 can corn, drained |
1 can enchilada sauce |
1 can tomato soup |
2 cups shredded cheddar cheese |
Directions:
1. Brown ground chuck and onion. 2. Tear tortillas into bite size pieces. 3. In a large bowl, mix all the ingredients together. 4. Spray a 13 x 9 inch pan with cooking spray. 5. Pour the mixture into the pan. 6. Bake at 350 degrees for about 30 minutes. |
