I make this easy casserole all of the time, and it is always a hit. Simple and really good! Ingredients:
1 lb lean ground beef |
1 (16 ounce) can corn |
1 (19 ounce) can enchilada sauce |
1 (4 1/2 ounce) can chopped green chilies |
1 package corn tortilla, cut into 1/2 inch strips |
1 cup finely shredded cheddar cheese |
guacamole |
diced tomato |
sour cream |
black olives |
Directions:
1. Heat oven to 375. 2. Grease 2 qt. 3. baking dish. 4. Brown ground beef in large nonstick skillet over med. 5. heat until thoroughly cooked, stirring frequently. 6. Drain. 7. Add corn, enchilada sauce and green chiles, mix well. 8. Spoon 1/4 of beef mixture into baking dish. 9. Top with 1/3 of tortilla strips. 10. Repeat layers 2 times, ending with beef mixture. 11. Cover with foil. 12. Bake at 375 for 40 minutes. 13. Uncover; sprinkle with cheese. 14. Bake an additional 5 minutes or until casserole is bubbly and cheese is melted. |
