Recipe from my Jordanian Brother in law's mother who is an amazing cook! These are awesome! So easy too! Ingredients:
20 -25 egg roll wraps |
1 lb baby carrots, minced |
4 jalapenos, chopped |
2 lbs ground chicken |
4 garlic cloves, minced |
1 medium onion, minced |
handful fresh parsley, minced |
vegetable oil (for frying) |
Directions:
1. In a food processor/mincer, combine all ingredients except for ground chicken. 2. Brown the ground chicken in pan with vegetable oil. 3. Drain grease, then add all minced veggies with the chicken. 4. Stir all together to form your eggroll mixture. 5. Start wrapping eggrolls, put mixture towards bottom of eggroll, roll up and tuck in sides. 6. Fry in skillet or pan with vegetable oil. 7. Serve. |
