An easy, easy way to make a quick Black Bean Soup. garnish with plain yogurt, cheese, or sour cream and serve with tortilla chips for crunch. A warning though, don't go back for seconds! The fullness factor develops slowly on this one. Ingredients:
3 cans of black beans |
your favorite mexican salsa (the chunkier the better) |
a pinch of cumin |
yogurt, cheese, or sour cream for garnish |
tortilla chips |
Directions:
1. Dump one can of black beans (juice and all) into your blender with about a half can's worth of salsa and blend 2. Dump the results into a saucepan 3. Dunp the other two cans of black beans into the saucepan with about a can's worth of salsa 4. Add a pinch of cumin (to taste) 5. Simmer for 10-15 minutes until it is warmed through and the flavors blend (it can keep simmering, no rush) 6. Serve with a dollop of yogurt or sour cream, or a sprinkle of cheese, and chips on the side for dipping or crushing |
