Easy Dijon Roasted Potatoes |

An excellent side dish - be sure to stir the potatoes often for even cooking and browning. Leftovers can be a good thing. Enjoy them cold as a salad. Ingredients:
1 1/2 lbs medium potatoes, cut into eights or 1 1/2 lbs mini potatoes, halved |
1/2 cup olive oil |
1/4 cup french's dijon mustard |
1 tablespoon dried oregano, basil or 1 tablespoon rosemary, leaves |
salt and pepper |
Directions:
1. Place potatoes in a large baking dish or roasting pan. 2. Combine remaining ingredients. Drizzle over potatoes. Toss to coat. 3. Bake at 424F for 30-40 minutes, stirring often, until potatoes are tender. |
