Easy Delicious Nutty Marshmallow Log |

Nutty marshmallow log...delicious, quick, easy, makes 100 small slices. Children can help make this one. Store in a container separating layers with waxed paper. Does not have to be refrigerated. Ingredients:
2 cups chopped pecans |
about 1-1/4 cups powdered sugar, divided |
1 (16 ounce) package marshmallows |
3-4 tablespoons peanut butter |
Directions:
1. Combine pecans and 1 cup powdered sugar
2. Sprinkle the above mixture evenly over a large sheet of waxed paper
3. Place marshmallows in top of double boiler, bring water to boil
4. Reduce heat to low; cook until marshmallows melt
5. Stir in peanut butter
6. Pour marshmallow mixture over powdered sugar pecan mixture
7. Mix with hands, until pecans and sugar are blended into marshmallow mixture and mixture resembles soft dough
8. Shape into 2 rolls, 1 inch in diameter
9. Let stand about 45 minutes
10. Roll candy in remaining powdered sugar
11. Let stand at least 30 minutes
12. Cut into 1/4 inch slices
13. Store in a covered container, separating layers with waxed paper
